Espresso Blend (dark)
Learning how to roast for espresso has been a challenge but it basically comes down to roasting lower and slower to dry out the bean for faster extraction. Beyond that, two different styles of roast are called for depending on if you use milk in your espresso drinks and if your machine is a good one.
In essence, lighter roasted coffee espresso, when underextracted, will pull a bit more sour than darker roasted. This is not so much a problem for a straight shot, but in milk drinks it's kind of unpleasant. Underextraction is a chronic problem for most home machines. If you're not sure your equipment can deliver, the darker roast is a safer option.
