Peru Honey Processed
This coffee comes to us from Sunrise Trading and is a honey-processed coffee, which means the beans are left for drying with some of their cherry (mucilage) still intact. Natural processed coffees have the whole cherry, and washed coffees have none. So they're a sort of in-between.
We use Peru here as the base for our espresso blends, mostly because it tends to have a sweet character I would categorize as "toasted marshmallow". The honey process on these beans adds it an additional banana-like note. As it cools the flavors turn towards raisins or dried plums. All in all a pretty glorious experience.
